Beginning his cheesemaking journey in Ireland, Gerard’s first experiences making artisan cheese was making raw milk cheeses with Corleggy Cheese in their Summer Cheese School. Already passionate about cheese, wine, travel and food, this experience provided a new direction and focus, and underpinned a passion to create outstanding artisan cheeses. Further opportunity arose with experience in Lancashire in the UK, the Netherlands, cheesemaking and affinage work in the Yarra Valley and then affinage work in Adelaide before setting up a facility on the Fleurieu in South Australia to create the Lilyarra™ range of artisan goat cheeses.
Since starting the business in 2015, Gerard has also consulted for a number of companies in Victoria, South Australia and New South Wales, has been a guest Cheesemaker at the Melbourne Truffle Festival, has set up and established a growing cheese business in South Australia, and has received recognition for his passion and focus to create outstanding artisan cheeses with three gold medals at the 2021 South Australian Dairy Awards.
